This recipe is so fudgy that you'll bite into this cookie and will grab another one mid-bite. Now, let's get into the details.

What's my favorite thing about these chocolate brownie cookies? The brownie cookie batter is not overly sweet and easy to scoop up. I didn't have any issue getting these cookies to fall off my medium cookie scoop and onto my cookie sheet lined with parchment paper. Another thing, there's no chill time needed for these cookies. I hate when I have to chill cookies because I just want to make them and go. I don't have time to sit and wait when I'm really craving chocolate. Prep and baking time is less than 30 minutes which is just enough time to sit and watch a show. Some days I really crave brownies and some days I want cookies. This is the perfect blend of two of my favorite things, brownie batter and cookie dough. What's better than a brownie in cookie form? Well maybe homemade brownies!

For this recipe I didn't use my mixer. Definitely a workout but you can do it. I like to use my hands sometimes because I don't want to clean my mixer. But if you do use a stand mixer or hand mixer, you have to use the whisk attachment to get the best batter. I like to start the mixer on medium speed, then end with the mixer on high speed before I finish. Just to make sure everything is blended.

- How to make the cookies more fudgy: I found that using less egg and less dry ingredients helps the batter be more fudgy. Also the cook time could change that as well. So instead of a 20 minute cook time make it 15 minutes. And use a toothpick to see if the batter is actually done by poking the cookies.
- Why are my cookies flat?: Your baking soda may be old. Sometimes if the baking soda is sitting to long it can change the recipe. Make sure you swap out your ingredients.
- How to tell when the cookies are done: Crackly top, shiny top, crisp edges are all a good sign the cookie is done. If you use less ingredients, the cookie will have chewy edges. Either way the cookies will have a fudgy center.
- Should I use a wire rack: YES! Wire racks help the cookies cool properly. If you keep the cookies on the warm cookie sheet they will keep cooking and change how the cookies look.
- Can you add extra ingredients? YES, for a little extra flavor you can add espresso powder. SO good!

Brownie Cookies
Ingredients
- ¼ cup unsalted butter softened
- 1 cup semi-sweet chocolate chips
- 2 eggs room temp
- 1 cup sugar
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
- 4 tbs cocoa powder
- ⅛ teaspoon baking soda
Instructions
- Preheat oven to 350
- In a small bowl add your eggs and sugar and whisk until the mixture is fluffy.
- Slowly add in the eggs, vanilla, and cocoa powder. Once this is mixed set aside.
- Add your butter and chocolate chips to a microwave safe bowl until melted. I like to do 20 second intervals until fully melted. Mix in between each 20 second interval.
- In another bowl add in your flour, baking soda, and salt.
- Add the butter mixture to the wet mixture and blend.
- Add in the wet mixture and flour mixture together until combined.
- Using your cookie scoop, add scoops to parchment paper lined cookies sheet. Making sure there's space between each cookie.
- * Add a marshmallow to the top of the cookie scoop on the parchment paper. This is optional.
- Cook for 10 minutes and cool on a wire rack. Enjoy!
