You have to try these cinnamon roll cookies
Biting into these cinnamon roll cookies is like biting into your favorite dessert in cookie form. My favorite thing about cinnamon rolls is the icing but I really wanted to try this recipe in cookie form. The first attempt turned out horribly but the key to this recipe is to roll out the dough like a cinnamon roll and sprinkle the cinnamon inside. Next you have to cut up the dough like you would a regular cinnamon roll and bake.
Tips:
- Splitting the dough in half makes it easier to sprinkle the cinnamon sugar. It's also quicker to cut up the cookies this way.
- Add some leftover cinnamon sugar on top of the cut up cookies for some extra flavor.

Cinnamon Roll Cookies
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup unsalted butter (softened)
- ½ cup granulated sugar
- ½ cup light brown sugar
- 1 large egg
- 2 teaspoon vanilla extract
For the Filling:
- ½ cup light brown sugar
- 2 teaspoon ground cinnamon
Powdered sugar icing:
- ½ cup Powdered sugar
- 2 tablespoon whole milk
Instructions
- preheat your oven to 350 and line your baking sheet with parchment paper
- In a large mixing bowl, whisk together your flour, baking powder, salt, and cinnamon. Set aside while you work on your sugar mixture.
- In another bowl, mix your softened butter and both sugars until fluffy. Add your egg and vanilla extract.
- Add the flour mixture 1 cup at a time. Split the dough in half when it's fully mixed and roll it flat on a piece of parchment paper. Sprinkle the cinnamon sugar mix on the dough and roll it up. Use a sharpe knife to cut the cookies.
- Bake at 350 for 15 minutes. Let them cool on your baking sheet and enjoy with some icing.
