Frosted Copycat Crumbl Cookie - Original Pink Sugar

Save your money, make a Crumbl cookie at home. This recipe is my delicious Copycat Crumbl Pink Sugar Cookie, a soft cookie topped with sweet pink frosting. YUM!

Make your favorite cookies at home!

I used to go to Crumbl often! My husband and I were addicted to the mini cookies. The full-sized cookies never hit the same. After a while, I was tired of spending my money there. I bake after all! So I challenged myself to make the Copycat Crumbl Pink Sugar Cookie right at home.

Sugar cookies are one of the easiest cookies to make. There is a lot of back and forth whether it's a good cookie and I have to say, I LOVE a sugar cookie during the holidays with some hot chocolate. A frosting with some color is so fun to make. And it can make a simple sugar cookie that much more vibrant.

    Tips:

    1. You don't need to chill this cookie recipe. I love a cookie recipe that doesn't need to be refrigerated. Whip up all of the ingredients and pop the cookie dough on the baking sheet.
    2. Make your frosting while the cookies are baking. I sometimes forget to do this, but having the frosting prepared ahead of time saves you so much time.
    3. Invest in a cookie cooling rack. It's a necessity if you plan to bake. Leaving the cookies on the baking sheet can cause them to keep baking due to the high heat.

    Ingredients

    Cookie dough:

    • 2 sticks of softened butter
    • 1 cup granulated sugar
    • 2 large eggs
    • ½ teaspoon vanilla extract
    • ¼ teaspoon almond extract
    • 3 cups all-purpose flour
    • 2 teaspoon baking powder

    Pink Frosting

    • 2 ½ cups powdered sugar
    • 1 stick of softened butter
    • ½ teaspoon of almond extract
    • 3 tablespoon milk
    • A few drops of pink gel food coloring - sometimes it's called neon pink depending on the packaging.

    Instructions

    • Preheat the oven to 350 and prepare your cookie sheet with parchment paper.
    • In a medium bowl, use your hand mixer and blend the sugar and butter.
    • Add both eggs, vanilla extract and almond extract.
    • Follow this up with the flour and baking powder. I put both the flour and baking powder in a separate bowl and whisked them together. I added the flour mixture 1 cup at a time to the butter mixture.
    • Using a 2 tablespoon cookie scoop out the dough and roll it out. Place the dough on your baking tray with parchment paper and use your ½ cup to flatten the cookie. Try not to press it down too hard you want this to be in the shape of a typical sugar cookie.
    • Baking for 12 minutes and let the cookies cool on a cooling rack. While the cookies are cooking make the frosting.

    For the frosting:

    • Add all of the ingredients to a bowl (except for the food coloring) and mix together. Add the pink gel food coloring once the other ingredients are fully blended.
    • Using a butter knife scoop some frosting onto a warm cookie and let this set. Pop them in the fridge to chill or enjoy them warm.
