Not too much lemon flavor
The best part about this recipe is that it's not to much of the lemony flavor, the reason being I used a small amount of lemon juice or you can use lemon extract. The vanilla extract also helps combat the strong lemon flavor so it's the best of both worlds. For people who aren't huge fans of lemon but still want that sweet taste, this is the recipe for you. You can always add in more lemon juice to your glaze so you can taste more of that flavor. Another fun add is brushing lemon juice on the freshly baking loaf. As soon as it comes out the oven you can coat it in lemon juice. If that's not for you then follow the recipe as is. The only thing I would suggest is do not substitute the sour cream.
Sour cream in cakes
I've noticed that my cakes taste so much better when I use sour cream. This higher fat level than other common dairy go-tos in baking such as milk and buttermilk. Sour cream adds moisture to your desserts without thinning out your batter the same way that a liquid would. If your recipe calls for a sour cream swap I would recommend trying it.
Let's talk about the lemon glaze
The sweet and delicious lemon glaze I pour on top of this recipe is fantastic. You don't need to have this be an iced lemon loaf, you can eat it as is. You could even add powdered sugar. The glaze adds that extra bit to the Starbucks copycat recipe to make it incredible. For the lemon glaze I used the bottled lemon juice from the produce aisle. You can also cut up some medium-sized lemons and squeeze that fresh lemon juice flavor in. SO much lemon flavor! I have this recipe on my list of great recipes. Before you pour batter into the prepared loaf pan make sure it's greased properly. I use a baking spray you can buy at grocery stores. Once the lemon loaf is in the oven and some cooking time has gone by, poke the top of the loaf with a toothpick and make sure it comes out clean. Copycat Starbucks Lemon Loaf
Ingredients
- 1 ½ cup flour
- ½ tsp salt
- ¼ teaspoon baking powder
- ½ cup softened unsalted butter
- 1 cup sour cream or buttermilk
- 1 cup granulated sugar
- 3 large eggs (room temp)
- 1 tbs lemon juice
Glaze:
- 1 cup powder sugar
- 1 tbs almond milk
- 1 tbs lemon juice
Instructions
- Preheat oven to 350
- In your mixer, add the sour cream, sugar, and butter.3. Slowly add in one egg at a time and mix everything together.
- Next add your flour, baking soda, baking powder, salt, and lemon juice. Mix everything until fully combined.
- Add the loaf mix to your loaf pan sprayed with baking spray. I used both baking spray on the pan and parchment paper.
- Cook for 55 minutes. Use a toothpick to see if the loaf is done on the inside. Let it cool in the pan for 10 minutes before glazing.
- Prepare your glaze and pour the glaze on top of the loaf. Cut and enjoy!
