These baked pumpkin donuts will be a recipe you revisit every fall. A soft and fluffy doughnut with a powdered sugar glaze on top. They're easy to make and delicious!

When you think of fall you immediately think of pumpkin and apple flavors. I've been fall baking since the end of August so I'm ready! I've been cranking out the pumpkin recipes left and right starting with these baked pumpkin doughnuts. I love baking donuts because it's pretty simple. There isn't a lot of mess that goes into baking donuts compared to frying them. Both are equally good but sometimes I don't feel like frying things. So if you're like me and you want to just pop a recipe in the oven, this is the recipe for you.

These donuts have pumpkin puree in them along with some of my favorite fall spices such as cinnamon and nutmeg. The pumpkin flavor isn't strong so you don't get overwhelmed with the flavor. I like to have a taste of all of the ingredients and not just one that takes over the rest. I want it to have an equal blend of flavor.

Baked Pumpkin Donuts
Ingredients
- ¼ tablespoon Salted Butter melted and cooled.
- 2 cups All-Purpose Flour
- 2 teaspoon Baking Powder
- Pinch of salt
- 1 ½ teaspoon Cinnamon
- ¼ teaspoon Ginger
- ¼ teaspoon Nutmeg
- ⅓ cup Vegetable Oil
- 1 cup Granulated sugar
- ½ cup Light brown sugar
- One 15oz Can Pumpkin Puree
- ½ teaspoon Vanilla
- 3 Large Eggs
Maple glaze:
- 1 cup powdered sugar
- 2 tablespoon maple syrup
- 1 tablespoon whole milk or plant-based milk.
Instructions
- Preheat oven to 350 and spray your doughnut pan with baking spray
- In a medium bowl, add the flour, baking powder, salt, cinnamon, nutmeg, and pinch of salt. Whisk these ingredients together and set aside.
- Melt your butter on the stove and let it cool for five minutes. Add the butter to another bowl with the granulated sugar and light brown sugar. Mix this together until its fluffy and add the eggs one at a time. Mixing between each. Add the vanilla extract, vegetable oil, and pumpkin puree. Once this is blended, the wet mixture needs to be added to the flour mixture slowly.
- Using a piping bag or zip loc bag, add the doughnut mixture to your dougnut pan.
- Bake the doughnuts at 350 for 14 minutes. As the doughnuts are baking, make your maple glaze.
- Once the doughnuts are done, let them cool and dip them into the maple glaze. Enjoy your fall treat!
