Why you'll love this eggnog coffee cake!
Eggnog is a holiday staple and there are so many things you can make with eggnog or you can just enjoy the drink by itself. But for me, I had to make a recipe of course. And I said to myself, what if I added some eggnog to a coffee cake recipe? SO I made one and it was delicious. I didn't want the eggnog flavor to over power the other ingredients. I like a good mix of everything so you can actually enjoy the dessert without being overwhelmed with flavors and scents. I used 1 ¼ cup of eggnog which combined perfectly with the spices and flour mixture.

Eggnog coffee cake
Ingredients
Egg Nog Coffee Cake:
- 2 cups all-purpose flour
- 2 teaspoon baking powder
- ½ teaspoon salt
- ¾ teaspoon nutmeg
- ¼ teaspoon cinnamon
- 1 stick of unsalted butter, at room temperature
- ¾ cup granulated sugar
- 3 large eggs
- 1 ¼ cup Oakhurst Dairy eggnog
- 1 tablespoon dark rum, optional
Streusel topping:
- ¾ cup all-purpose flour
- ½ cup light brown sugar
- ½ teaspoon nutmeg
- ½ teaspoon cinnamon
- 6 tablespoons unsalted butter, cold and cut into cubes
Eggnog icing:
- 1 cup Powdered sugar
- 2 tablespoon Okahurst Dairy eggnog
Instructions
- Preheat your oven to 350 degrees and using baking spray to coat your 9X9 baking pan.
- In a medium mixing bowl, add your flour, baking powder, salt, nutmeg, and cinnamon. Whisk to blend together.
- In a bowl of electric mixer, add your room temp butter and sugar. Mix this together until it's light and fluffy. And make sure you scrape down the bowl as you're mixing. Add the eggs one at a time mixing well between each egg you add.
- With. your mixture on a low speed, add the dry ingredient following up with the Oakhurst Dairy eggnog. I like to add the dry ingredients a little bit at a time.
- Add the wet mixture to your greased baking pan and top it with your Streusel topping.
- Bake the eggnog coffee cake for one hour. Rotating the pan throughout the bake time. Once the hour is up, use a tooth pick and poke the center. If the toothpick comes out clean take the coffee cake out, and let the cake cool in the pan for 5-10 minutes. Drizzle with the eggnog icing to complete!
For the streusel topping:
- Add the flour, sugar, nutmeg and cinnamon in a bowl. Add the butter in pieces and use a fork to mix it up or your finger tips. Sometimes I use my pastry cutter to mix it all together until it turns into a crumbly texture. Spread the streusel topping over the cake batter.
