    Homemade Dark Chocolate Biscotti

    A deliciously flavored sweet potato side dish and the perfect holiday recipe. These garlic parmesan sweet potatoes have become one of my favorite side dishes to make during the holidays. They’re super filling and quick to make which is perfect if you’re making a crazy meal. You want your side dishes to be quick and hassle-free and this is a HASSLE-FREE dish. Prep time for these garlic parmesan sweet potatoes takes about 15 minutes. All you have to do is peel them and clean them. Next, you need to cut them into slices and toss the cut sweet potatoes into a bag with olive oil and the spices I list in the recipe below. Sweet potatoes are not only good for you because they’re packed with vitamins and minerals, it’s the perfect vegetable that can be made a bunch of different ways. The possibilities are endless. 

    Now, why did I pick garlic parmesan? Because I wanted to make a side dish with the ingredients I already had in my house. The best type of dish are the ones you don’t need to put a ton of effort into. I had the spices, minced garlic, and parmesan. Cooking this dish at 400 degrees allows the potatoes to get charred. A tasty charred potato is so good! The key to this recipe is coating the sweet potatoes in olive oil and the melted butter before you bake them. As you can see below, I tossed everything in a bad and shook it up. Let it sit for about 10 minutes and then place the sweet potatoes in a baking dish. Also make sure your dish is coated as well. I used a little bit of olive oil!

    Garlic Parmesan Sweet Potatoes

    Ingredients
      

    • 4-5 sliced sweet potatoes
    • 4 tbs olive oil
    • 1 tbs melted butter
    • 1 tbs minced garlic
    • 1 teaspoon garlic salt
    • 1 teaspoon paprika
    • 1 teaspoon Italian seasoning
    • 1 teaspoon crushed red pepper
    • 4 tbs grated Parmesan cheese

    Instructions
     

    • Preheat the oven to 400 degrees - temp depends on how new or old your oven is. Double check how fast it's cooking around 20 minutes and see if you need to turn down the temp.
    • Lightly oil a large oval baking dish and set aside
    • Peel 5 sweet potatoes and rinse them.
    • Cut them into slices. Place sliced potatoes into a large Ziploc bag.
    • Add all of the additional ingredients together and shake up the bag until everything is mixed together.
    • Place the sliced sweet potatoes on top of the other. Cook at 400 degrees for 45 minutes.
