Homemade Snowball Cookies!
I made a delicious holiday recipe that you’ll be obsessed with for years to come. I promise you when you bite it and taste the buttery deliciousness, you’ll pick up ten more cookies and eat them right up, Holiday Snowball Cookies! This snowball cookie recipe is popular during Christmas and if you look at other recipes, all of the ingredients are pretty consistent. The prep time is very quick, and the cook time is 10 minutes. What’s better than that? A tasty cookie, quick cook time, and very little prep. Sounds like the best Christmas gift.
Here's how to make this recipe
The key with the dough mixture is room temp butter. The butter needs to be room temp, not melted. If the butter is melted it effects the consistency of the flour which can lead to a flat cookie when you bake it. You can use a hand mixer, stand mixer, or just mix it up with a spoon like I did because I didn’t want to clean my mixer. But you need two separate bowls for the butter mix and the flour mix. In one bowl you have the room temp butter, almond extract and vanilla extract, and powdered sugar. Make sure when you mix this all together the mixture is creamy. If you have chunks of butter left, it will cause little burned sections of your cookie. So if you see butter chunks and your mixer isn’t blending it together. Don’t be afraid to use your hands to finish it off.
My favorite part about this snowball cookie recipe is rolling each one in powdered sugar TWICE. It’s a complete mess when you bring the cookie to your mouth to eat it but I promise, snowball cookies are SO worth it. Once you take the cookies out the oven, let them cool off for 2-3 minutes. From there, do your first initial roll in the powdered sugar (put your powdered sugar in a bowl). From there place the cookies back on your cooling rack for about a minute. Roll the holiday snowball cookies in the powdered sugar again and then you’re all done!

Snowball Cookies
Equipment
- Hand mixer
- Cookie sheet lined with parchment paper
Ingredients
- 2 ¼ cup flour
- ¾ cup chopped pecans
- 1 cup unsalted butter (two sticks)
- ½ teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- ½ cup powdered sugar
Instructions
- Preheat oven to 400 degrees!
- Add the flour, pecans, and salt in a bowl and mix together. Set aside.
- In another bowl, add the softened butter vanilla extract, almond extract (optional) and powdered sugar. Mix with a hand mixer or by hand until the mixture is creamy. It took me a few minutes to get it to a creamy consistency.
- Add the flour mix to the butter mix 1 cup at a time. And mix together until no flour is visible.
- Use a cookie scoop and place them about 1 inch apart. Cook for 10 minutes at 400.
- Once they are cooked, place them on a cooling rack. Roll in a bowl of powdered sugar. And continue this process another time. The cookies are a mess to eat but delicious.
