Add the flour, pecans, and salt in a bowl and mix together. Set aside.
In another bowl, add the softened butter vanilla extract, almond extract (optional) and powdered sugar. Mix with a hand mixer or by hand until the mixture is creamy. It took me a few minutes to get it to a creamy consistency.
Add the flour mix to the butter mix 1 cup at a time. And mix together until no flour is visible.
Use a cookie scoop and place them about 1 inch apart. Cook for 10 minutes at 400.
Once they are cooked, place them on a cooling rack. Roll in a bowl of powdered sugar. And continue this process another time. The cookies are a mess to eat but delicious.

* next time I make these I'm going to leave out the almond extract. I wasn't a fan of it. The taste is subtle but I noticed it.
