    Who's ready for another ice cream sandwich recipe? My chocolate chip cookie ice cream sandwich takes chocolate chip cookies to the next level!

    A new way to eat chocolate chip cookies

    I took the best parts of a chocolate chip cookie and made them into ice cream sandwiches. A sheet pan with cookie dough that gets baked and cut in half. You then want to add softened vanilla ice cream to the middle and wrap the ice cream sandwich layers in plastic wrap. It will get messy, but that's the best part. Freeze the ice cream sandwiches for two hours and use a sharp knife to cut into bars. My husband and I could only eat one because they were so THICK and filling.     Cookie dough is so easy to make. For this recipe, you need a sheet pan lined with parchment paper. Press the cookie dough into that sheet pan and bake. The cookie layer has to cool completely before you add the ice cream to it.

    Ingredients
      

    • 2 1.2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon  salt
    • 1 cup unsalted butter softened
    • ¾ cup granulated sugar
    • ¾ cup brown sugar packed
    • 1 teaspoon vanilla extract
    • 2 large eggs
    • 2 cups semisweet chocolate chips
    • Softened vanilla ice cream (take it out of the freezer while the cookie sheet is cooling)

    Instructions
     

    • Preheat your oven to 375
    • Mix up the cookie dough ingredients by adding all the dry ingredients to a bowl and mix it up. So the flour, salt, baking soda.
    • In another bowl, add the softened butter, both sugars, vanilla extract and eggs. Slowly add the dry ingredients to the went ingredients. Once everything is combined, add the chocolate chips. Using a cookie scoop to add the chocolate chip cookie mix to your small sheet pan and use your hands to shape it to the pan. Bake the sheet pan cookies at 375 for 15-20 minutes.
    • Once it's done let it cool completely on these sheet pan. Once it's cool. Cut it in half and add the softened vanilla ice cream and use a spoon to spread it around. Wrap it in plastic wrap and freeze for 1-2 hours. Unwrap and cut up the ice cream sandwiches. It'll be messy but DELICIOUS
