    Chewy and chocolatey S'mores Cookie Bars! An easy, sweet, and delicious recipe to make!

    Your new favorite dessert: S'mores Cookie Bars!

    When I made this treat, I knew they would taste delicious. You can't go wrong with graham crackers, cookie dough, marshmallows, and chocolate. These bars are so chewy and delicious. I had to hide a few so my husband wouldn't eat them all. When the warm bars came out of the oven, I topped them with pieces of a Hershey bar, and the chocolate just melted right into the cookie dough and marshmallow. If you're craving something sweet, this is exactly the treat you need.

    What you need for this recipe

    For this recipe, you need an 8x8-inch or 9x9-inch baking pan and parchment paper. The parchment paper is there so the recipe doesn't stick to the pan. You don't need anything fancy. I got this parchment paper from Dollar Tree and it's just as good as a name brand.

    Equipment

    • baking pan 8x8 inches or 9x9 inches
    • parchment paper

    Ingredients
      

    • 2 cups all-purpose flour
    • ½ cup unsalted butter, softened and slightly melted
    • ¾ cup light or dark brown sugar, packed
    • ⅓ cup granulated sugar
    • 1 large egg + 1 egg yolk
    • 1 teaspoon vanilla extract
    • ½ teaspoon baking soda
    • ⅛ teaspoon salt
    • Large marshmallows, cut in half. 4 marshmallow halves in each row (16)
    • 2 cups milk chocolate chips
    • 1 Hershey’s bar (for topping)
    • Graham crackers, enough to line the bottom of your square baking pan 8x8 inches or 9x9 inches. I used 9 squares

    Instructions
     

    • Preheat your oven to 350°F. Line an 8x8-inch baking pan with parchment paper
    • In a large bowl, mix together the melted butter, brown sugar, and granulated sugar until smooth.
    • Slowly add in the egg, egg yolk, and vanilla extract. Mix until fully combined.
    • Next, add in the flour, baking soda, and salt just until everything is full mixed together. Do not overmix the batter.
    • Fold in one cup of the chocolate chips, saving the rest for the filling and topping.
    • Using a cookie scoop, add the cookie dough evenly over the graham cracker evenly. Press gently into an even layer. Not too hard. Save some cookie dough on the side, though, don't use it all.
    • Add marshmallows and chocolate chips like I'm doing in the video.
    • Add the remaining cookie dough over the marshmallows, leaving some marshmallows exposed, and add the chocolate chips on top.
    • Bake at 350 degrees for 25–30 minutes, or until the edges are golden brown and the center is just set.
    • Remove from the oven and let the bars cool in the pan for 20 minutes. While it's still warm, press pieces of a Hershey's chocolate bar on top.
    • Remove from the pan and cut the bars with a sharp knife. Enjoy!
