
Let's Make Strawberry Crumble Bars!
Strawberries are in season during the month of July, so take advantage and pick up some fresh ones and make these Strawberry Crumble Bars. I've made this recipe a few times with blueberries and it's just as good. It's one of those desserts where you can swap different fruits out and it will be delicious every single time. Lemons and Raspberries are also in season so you can try those next. This summer dessert recipe will be one of those sweet treats you keep coming back to because it's so easy to make. This could also make a tasty appetizer or dessert for a holiday party. Something sweet to break up a salty meal.
Strawberry desserts have slowly become my favorite over the last few years. It's a fruit I enjoy alone and in a recipe. Summer bbqs and parties call for easy recipes as well and you want to spend more time outside, this recipe takes 40 minutes so you can whip this up and have it done really quick. Tips:
- I find that using fresh strawberries gave me the best results. But if you only have frozen ones available, thaw them out before you pop them on the stovetop.
- You can also blend up the strawberries for a few seconds and then pop it on the stove to heat up if you want to cook them quicker.
Strawberry Crumble Bars
Ingredients
Strawberry mixture Ingredients
- 2-3 cups 2-3 cups strawberries tops removed, quartered, divided
- 1 tbs corn starch
- ¼ cup maple syrup
- 1 teaspoon lemon juice
Crumb layers:
- 3 ¼ cups all-purpose flour
- 2 cups granulated sugar
- ¼ cup light brown sugar tightly packed
- ½ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
- 1 cup unsalted butter cold, cut into small cubes
- 1 egg
- 1 teaspoon vanilla extract
Dough:
- ½ cup unsalted butter softened to room temperature
- 4 oz cream cheese
- 1 cup granulated sugar
- 2 teaspoon vanilla extract
- 2 large eggs
- 2 ¼ cup all-purpose flour
- 2 teaspoon cornstarch
- 1 teaspoon baking powder
- ¼ teaspoon salt
Instructions
- Prepare the dough by combining all the dry ingredients together in a medium sized bowl.
- In your mixer, add the softened butter followed by cream cheese, eggs, vanilla extract. Add in the dry ingredients until mixed together properly.
- In a square pan, spray with baking spray and place the mixed dough in there.
- Next, Smash strawberries with all of these ingredients on the stovetop and cook for about 4 minutes (make sure to keep stirring so it doesn't stick).
- Let the mixture cool on the side then place on top of the dough followed by the crumble.
