Strawberry mixture Ingredients
- 2-3 cups 2-3 cups strawberries tops removed, quartered, divided
- 1 tbs corn starch
- ¼ cup maple syrup
- 1 teaspoon lemon juice
Crumb layers:
- 3 ¼ cups all-purpose flour
- 2 cups granulated sugar
- ¼ cup light brown sugar tightly packed
- ½ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
- 1 cup unsalted butter cold, cut into small cubes
- 1 egg
- 1 teaspoon vanilla extract
Dough:
- ½ cup unsalted butter softened to room temperature
- 4 oz cream cheese
- 1 cup granulated sugar
- 2 teaspoon vanilla extract
- 2 large eggs
- 2 ¼ cup all-purpose flour
- 2 teaspoon cornstarch
- 1 teaspoon baking powder
- ¼ teaspoon salt
Prepare the dough by combining all the dry ingredients together in a medium sized bowl.
In your mixer, add the softened butter followed by cream cheese, eggs, vanilla extract. Add in the dry ingredients until mixed together properly.
In a square pan, spray with baking spray and place the mixed dough in there.
Next, Smash strawberries with all of these ingredients on the stovetop and cook for about 4 minutes (make sure to keep stirring so it doesn't stick).
Let the mixture cool on the side then place on top of the dough followed by the crumble.
