    Get ready for fall with my Pumpkin Sugar Cookie Bars. A soft sugar cookie base with a cream cheese frosting filled with fall spices. Keep reading to get the full recipe.

    Pumpkin Sugar Cookie Bars you'll love to share with your friends

    I first tried this recipe on TikTok live to see if it would even come out good and it turns out, it worked. I'm fully into fall with these pumpkin recipes and these sugar cookie bars will be one of your favorite fall recipes to make. The bars are soft enough and light to enjoy with coffee or tea in the morning. I took a few to work with me and it hit the spot. SO delicious and the cream cheese frosting made the dessert so much better.

    You need a square baking pan for this recipe lined with parchment paper so the bars can easily slide out. If you don't have parchment paper available you need to spray the baking pan with baking spray and make sure every inch is covered.

    Sugar Cookie Bar Tips:

    • The bars needed some additional time to cook. I popped them in for about an hour but the cook time is about 55 minutes. It all depends on the stove you have and how it preheats. Just make to check on it halfway and poke the bars with a toothpick and see if it comes out clean.
    • The cream cheese block needs to be softened before you mix it. Before you begin this recipe take your butter and cream cheese out and leave it on the counter so it can be soft.

    Pumpkin Sugar Cookie Bars

    Ingredients
      

    For the bars:

    • 2 ½ cups all-purpose flour
    • 1 cup unsalted butter, softened (two sticks)
    • 1 cup granulated sugar
    • ½ cup light brown sugar
    • 2 tablespoon canned pumpkin puree
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • ½ teaspoon baking powder
    • ½ teaspoon  salt
    • 1 ½ teaspoon pumpkin pie spice

    For the Frosting:

    • ½ cup unsalted butter, softened
    • 8 oz cream cheese, softened
    • 2 cups powdered sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon

    Instructions
     

    • Preheat oven to 350
    • Prep a square baking pan with parchment paper and set aisde.
    • In a medium-sized bowl add your flour baking soda and baking powder, pumpkin pie spice, and finally the salt. Whisk this up and set aside.
    • In another bowl all the softened butter and both sugars. Use a mixer for a spoon to mix this up until the mixture is fluffy.. Add the eggs one at a time followed by the pumpkin puree and vanilla extract.
    • Add the flour mixture ½ cup at a time to the wet mixture and using your spoon make sure everything is mixed together properly. Scrape down the bowl walls to make sure there isn't any flour left around.
    • Add the bars to the square baking pan and spread out using a spoon. Make sure the batter covers all of the corners.
    • Bake the bars at 350 for 45-55 minutes. Check halfway with a toothpick to see if it's ready. If the toothpick comes out clean then the bars are ready.
    • As the bars are baking start the cream cheese frosting. Add all of the ingredients to a medium-sized bowl and mix with your hand or stand mixer. Use a spoon if you don't have either.
    • Let the cooked bars cool before you spread the frosting on top.
