This easy one pan baked chicken dinner is perfect for leftovers. The whole family will love this quick meal and if you're solo, this meal takes an hour to cook and all you have to do is pop it in the oven.
Effortless: All you have to do is season the chicken potatoes and pop it into a baking dish. The flavor is AMAZING and my family loved it.
Customizable Comfort Food: You can add anything you want to this recipe. I added chopped onion but you can add peppers and any other additional vegetable you want. This recipe is versatile enough for any season.

Mixing up the potatoes:


These are some of my favorite ingredients to coat my potatoes in. You can swap them with some of the ones you like but the way these ingredients mix together tastes so good. Make sure you coat the potatoes in olive oil so the seasonings can stick to them. I also let the seasoning sit for a few minutes so it can really soak into the potatoes.
- 2 tablespoon olive oil to coat the potatoes
- 2 yellow yukon potatoes
- 2 tbs minced garlic
- ½ chopped white onion
- 2 teaspoon paprika
- 1 teaspoon rosemary
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
You need to let this recipe rest before serving because once it comes out of the oven it's extremely hot.

Easy One Pan Baked Chicken dinner
Ingredients
Seasoning for the potatoes
- 2 tablespoon Olive oil to coat the potatoes
- 2 yellow yukon potatoes (peeled and chopped into cubes)
- 2 tablespoon Minced garlic
- ½ chopped white onion
- 2 teaspoon Paprika
- 1 teaspoon Rosemary
- ½ teaspoon Garlic powder
- ½ teaspoon Onion powder
Instructions
- Set your oven to 425
- Grease your baking pan and prepare your ingredients.
- In a medium sized bowl, add your peeled and cubed potatoes, seasonings above, and 2 tablespoon olive oil and coat the potatoes fully in the seasoning. Set aside.
- Coat the chicken in the ingredients above and add the chicken to a greased baking pan. Add spoonfuls of the potatoes in between each chicken.
- Bake at 425 for one hour.
- As the chicken is cooking, coat the chicken in the juice as the meal is cooking. It helps the chicken stay tender and the skin won't burn up and crisp.
