A simple dinner recipe to whip up
These skillet meatballs were SO delicious and a last minute dish I put together for Sunday dinner. I needed something quick that would keep us full. Meatballs are always easy to make and it's one of those meals that don't require much work. My son is allergic to eggs and some people use eggs to bind the meatballs together so for this recipe I only added some of my favorite seasonings to keep them together. And for some other meatballs I used breadcrumbs as a test because I wanted some extra flavor.

How to make these skillet meatballs
For this dish you need a cast iron skillet. If you don't have one you can use a baking dish. First you need to season the ground beef. Here's what I used to season my beef.
- ½ cup of Italian bread crumbs (optional)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon rosemary
- 1 teaspoon bail
- 1 teaspoon red pepper flakes
The breadcrumbs are optional and like I said above my son has an egg allergy. The breadcrumbs I used were made in a facility with eggs so I made the ones mixed with breadcrumbs separately.
Next, you need to roll up your meatballs and place them on your skillet that has sauce on the bottom. Follow this up with mozzarella cheese on top. The cheese melts into the sauce and once the meatballs are cooked you toss it all together.
