And yes, these were just as good. If you eat enough appetizers they eventually turn into a meal! And that's just what my husband and I did. This recipe is a quick meal you can pop on a cookie sheet or a cast iron as I did above and cook them for 10 minutes or until the peppers are cooked and soft.
Some people love a bit of a char on the peppers which adds a bit of a crunch to the recipe. I like to think the char adds some extra flavor to the meal. When the weather gets warm, I can't wait for summer so I can pop these peppers on the grill and enjoy with some delicious side items like a fresh salad. I can't resist this recipe. Stuffed peppers is a recipe I never really made until recently. I never realized how filling it could be and easy to make.
Mini stuffed peppers plant-based swap
These mini stuffed peppers can be plant-based as well. You can swap out the protein with plant-based meat and cheese and you can make it a meatless Monday meal. Sometimes I like to cut meat out during the week and get different types of recipes in. Not to mention, these mini stuffed peppers are so good and easy to make. You can make it an appetizer or dinner. That's the best type of recipe.
Mini stuffed peppers
Ingredients
- Ground beef (or ground turkey)
- Shredded cheese
- Taco seasoning for the meat
- Mini peppers
Instructions
- 1. Cook your protein, drain the grease and add ¼ cup of water and taco seasoning.
- 2. Cut your mini stuffed peppers horizontally and gut them out and clean.
- 3. Add cooked beef to the gutted peppers and top with shredded cheese.
- 4. Cook at 350 for 10-15 minutes or until the peppers are soft.
