These Caramel Apple Cheesecake Cookies I made are so soft and sweet I had to hold myself back from eating more than one. If you're on the hunt for a quick cookie recipe I think you should add this recipe to your recipe bank. Get ready for a flavor explosion.
Chopped apples on a cookie isn't common. You're probably thinking, why would she put green apple on top of a cookie? Well there's no rule to what needs to go on a cookie. You can put anything you want on your cookies. For my apple choice, you have to go with the granny smith apples. These apples AND the caramel sauce make this recipe what it is. The flavor combinations just work so well. It's a little bit salty and a little bit sweet. I love an unconventional cookie recipe. I tend to gravitate towards something with lots of flavor that might not be common. This recipe is perfect if you're looking for a show stopping recipe to bring to a party. The guests will be asking, who made the cookies?
Streusel topping!

You can You can go without the streusel topping but it really elevates the cookie. On your stovetop, you have to melt the butter and take that off the stove when it's fully melted. After this step you have to pop in the rest of the ingredients and mix everything together. Set this mixture aside while you start your cookies. You can also use a stand mixer to blend everything if you need to make large batches of the streusel topping.
Let's make the cookies!

Prepare the parchment paper lined cookie sheet and set your oven to 350 degrees. In your cleaned stand mixer you will add the butter from the cookie dough ingredients to your mixer along with both sugars. There are a lot of steps that go into this recipe so I suggest you scroll down to the recipe card and get step-by-step insight to how I made these cookies.
Scoop your cookie dough balls with your cookie scooper and set them about 1 inch apart on your cookie sheet. Bake the cookies for 13 minutes and let them cool on a wire rack once they're fully bakes.
Making the cream cheese frosting

Cream cheese frosting isn't for everyone. But I do recommend that you at least try it if you have the chance. Cream cheese frosting on a cookie is one of the best things I've ever had. I knew I had to add it to these cookies. With the flavor and toppings it only made sense that the frosting choice was cream cheese. In my recipe card I made a cream cheese frosting that isn't super sweet you'll love.
Tips:
- Soften ingredients ahead of time - both butter and cream cheese
- I used both caramel sauce and regular caramel. You don't have to use two like I did but I wanted to try something different.
- If you need more bake time, set your timer to 15 minutes and keep an eye on the cookies. Some

Ingredients
Cookie Ingredients
- ½ cup softened butter
- ¾ cup granulated sugar
- ¼ cup dark brown sugar
- 1 large egg at room temperature
- 2 tablespoon apple juice
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ¾ tsp baking soda
- ¼ teaspoon baking powder
- ¾ teaspoon cinnamon
- ¼ teaspoon nutmeg
- pinch of ginger
- ¼ teaspoon allspice
- ¼ teaspoon salt
Homemade streusel
- ¼ cup flour
- 2 tbs cold butter (you will melt this in a sauce pan)
- 1 tablespoon granulated sugar
- ¼ teaspoon salt
- ¼ tsp cinnamon
- 1 green apple cubed (to be placed on top of the cookie)
Cream cheese frosting
- 5 oz Softened cream cheese
- 4 tablespoon Softened butter
- ½ teaspoon Vanilla extract
- ¾ cup Powdered sugar
Instructions
- *Preheat oven to 350!
To make the cookies
- With your hand mixer, cream the butter, granulated sugar, and brown sugar together until fluffy.. Add in the egg, 2 tablespoon apple juice, and ½ teaspoon of vanilla extract. Mix to combine.Gently mix in the flour, cinnamon, ginger, nutmeg, allspice, salt, baking soda, and baking powder until the flour mixture is fully combined and it turns into cookie dough.
- I use my large cookie scoop to pop about 6 cookies on my parchment paper lined cookie sheet about 1 inch apart. Bake the cookies for 13 minutes. Let the cookies cool down.
To make the streusel topping
- Melt the 2 tablespoon butter in a saucepan. Remove the butter from the stove and add in the flour, sugar, cinnamon, and salt, and mix until it’s fully mixed together and it’s clumpy. Return to the heat on low until everything is blended. Set aside while you make the cookies.
To make the cream cheese frosting
- Mix the cream cheese, and butter, together until smooth. Next, add in the powdered sugar, and mix everything until it’s light and fluffy.
- Using a butter knife, frost the cooled-down cookies with the cream cheese frosting! Top with the cubed green apples and sprinkle with the streusel you have on the side. Finalize the cookie with a drizzle of caramel. Enjoy!
