Ingredients
  

Cookie Ingredients

  • ½ cup softened butter
  • ¾ cup granulated sugar
  • ¼ cup dark brown sugar
  • 1 large egg at room temperature
  • 2 tablespoon apple juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¾ tsp baking soda
  • ¼ teaspoon baking powder
  • ¾ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • pinch of ginger
  • ¼ teaspoon allspice
  • ¼ teaspoon salt

Homemade streusel

  • ¼ cup flour
  • 2 tbs cold butter (you will melt this in a sauce pan)
  • 1 tablespoon granulated sugar
  • ¼ teaspoon salt
  • ¼ tsp cinnamon
  • 1 green apple cubed (to be placed on top of the cookie)

Cream cheese frosting

  • 5 oz Softened cream cheese
  • 4 tablespoon Softened butter
  • ½ teaspoon Vanilla extract
  • ¾ cup Powdered sugar

Instructions
 

  • *Preheat oven to 350!

To make the cookies

  • With your hand mixer, cream the butter, granulated sugar, and brown sugar together until fluffy.. Add in the egg, 2 tablespoon apple juice, and ½ teaspoon of vanilla extract. Mix to combine.Gently mix in the flour, cinnamon, ginger, nutmeg, allspice, salt, baking soda, and baking powder until the flour mixture is fully combined and it turns into cookie dough.
  • I use my large cookie scoop to pop about 6 cookies on my parchment paper lined cookie sheet about 1 inch apart. Bake the cookies for 13 minutes. Let the cookies cool down.

To make the streusel topping

  •  Melt the 2 tablespoon butter in a saucepan. Remove the butter from the stove and add in the flour, sugar, cinnamon, and salt, and mix until it’s fully mixed together and it’s clumpy. Return to the heat on low until everything is blended. Set aside while you make the cookies.

To make the cream cheese frosting

  • Mix the cream cheese, and butter, together until smooth. Next, add in the powdered sugar, and mix everything until it’s light and fluffy.
  • Using a butter knife, frost the cooled-down cookies with the cream cheese frosting! Top with the cubed green apples and sprinkle with the streusel you have on the side. Finalize the cookie with a drizzle of caramel. Enjoy!
