One pot recipes are perfect for people on the go and that need a quick recipe they can eat throughout the week. And if you're like me, sometimes you just crave pasta and a hefty amount of parmesan cheese on top of your plate. Also, some days I just have such a busy work day, I need to throw something together really quick. This One pot Rigatoni Bolognese is just the meal you need in your life!
When I made this dish, my husband and I had it for a whole week. Yes, I probably needed a pasta break but who cares. I had dinner already done and stored in the fridge. When I say this is really a one pot recipe, you put everything (besides the ground turkey which needs to be cook separately) in the pot. If you're a pasta snob you can cook it in a separate dish.
The thing about this recipe is that I made a lot of swaps based on what I had in my pantry or freezer. I wanted to use ground beef but instead I used ground turkey which was delicious. I can't wait to see how you make this recipe. Let me know if you try this by leaving me a comment!
Tips:
- For the diced tomatoes I used this brand
- If you don't have a dutch oven, you can replace it with a large pot.

One pot Rigatoni Bolognese
Ingredients
- 1 Box Rigatoni pasta
- 2 tbs olive oil
- 1 lb ground turkey
- 1 medium onion finely chopped
- 1 carrot finely chopped
- 1 celery stalk finely chopped
- ¼ teaspoon garlic powder
- 2 teaspoon Italian seasoning
- salt & pepper to taste
- ¼ cup tomato paste
- 3 cups beef broth or more as needed
- 1 28 oz can diced tomatoes
- grated parmesan to serve (optional)
Instructions
- Cook your pasta according to the box instructions. Set aside.
- In a pan, add all of the above veggies (chopped) to your pan with 2 tbs of olive oil and get them soft.
- In another pan, cook your ground turkey with seasonings. In the same pan once the turkey is cookies add the beef broth, diced tomatoes, and tomato paste. Mix together until it bubbles.
- Get out your dutch oven and add in your pasta, veggies, ground turkey mix (that has the beef broth and diced tomatoes) an cook for an additional 25 minute
- Once hot, serve with grated parmesan on top.
