One pot Rigatoni Bolognese

Ingredients
  

  • 1 Box Rigatoni pasta
  • 2 tbs olive oil
  • 1 lb ground turkey
  • 1 medium onion finely chopped
  • 1 carrot finely chopped
  • 1 celery stalk finely chopped
  • ¼ teaspoon garlic powder
  • 2 teaspoon Italian seasoning
  • salt & pepper to taste
  • ¼ cup tomato paste
  • 3 cups beef broth or more as needed
  • 1 28 oz can diced tomatoes
  • grated parmesan to serve (optional)

Instructions
 

  • Cook your pasta according to the box instructions. Set aside.
  • In a pan, add all of the above veggies (chopped) to your pan with 2 tbs of olive oil and get them soft.
  • In another pan, cook your ground turkey with seasonings. In the same pan once the turkey is cookies add the beef broth, diced tomatoes, and tomato paste. Mix together until it bubbles.
  • Get out your dutch oven and add in your pasta, veggies, ground turkey mix (that has the beef broth and diced tomatoes) an cook for an additional 25 minute
  • Once hot, serve with grated parmesan on top.
