A childhood after school classic, homemade cosmic brownies! This was a staple for kids after school when they got off the bus. Fudgy, delicious, and so so good. Zoom in on these sprinkles and get ready to dive into this sweet dessert. I will admit, this one is a pain to make, so you really need the patience with this recipe.
Once you get in the groove with this recipe it'll be so easy to make. Since it's not a typical brownie recipe, it may take you a few tried to get it right. It's okay and I know it's frustrating when recipes don't go the way you want. But once this recipe is done and you take the first bite, you'll be in heaven!
Mixing up the brownie ingredients



First you want to kick this off with the brownie ingredients. Mix everything in a medium-sized bowl in a square pan lined with parchment paper. The parchment paper helps the brownies come out without hassle.
Ganache topping


The ganache topping has to sit in the fridge for an hour before you cut up the brownies to enjoy. Make sure you pop them back in the fridge after you're done so the chocolate topping doesn't melt.
I was never a fan of cosmic brownies until I was older and I really started to enjoy more chocolate desserts. Don't eat too much or you'll be up all night with a sugar high! Or do, there's no rules with chocolate over here. Follow the recipe instructions below to make this dessert for yourself. Tips:
- The key is to pop the brownies in the fridge with the fudge top so it hardens. You can even keep the brownies in there overnight.
- I got the sprinkles on Amazon but you can find them at your local grocery store. I found some at Wegmans.

Cosmic Brownies
Ingredients
Brownies:
- ¾ cup flour
- ½ cup butter melted
- 1 cup sugar
- 2 teaspoon vanilla extract
- 2 eggs
- 1 tbs light corn syrup
- 2 tbs milk
- ¾ cup cocoa powder
- ¼ teaspoon salt
Ganache topping:
- ½ cup Heavy cream
- 1 cups Semi-sweet chocolate chips
- 1 tbsp Light corn syrup (optional)
- Rainbow candy coated chocolate chips
Instructions
Instructions for brownies:
- Preheat oven to 350
- Add the melted butter and sugar to your mixer and blend until light and fluffy.
- Add the eggs, vanilla extract, and light corn syrup until its mixed together. Slowly add in the milk and mix.
- In a medium bowl add the flour, cocoa powder, and salt and whisk together. Slowly add this flour mixture to the wet mixture 1 cup at a time.
- Pour brownie batter into a square pan that's greased or you can line it with parchment paper.
- Cook brownies at 350 for 27 minutes. Add a few minutes if you need more bake time on the brownies. Let the brownies cool before you add the ganache topping on top.
Instructions for Ganache:
- On the stove top, heat up the half and half. Add your chocolate chips and corn syrup to a heat proof bowl on the side.
- Pour the heated half and half over the chocolate and corn syrup. Pour the frosting on top of the brownies while it's still slightly hot and top with sprinkles. Place in the fridge for a few hours for the frosting mixture to harden.
- Once the brownies are cool, place the frosting on top followed by the sprinkles. Set in the fridge for 3-4 hours to harden. I let it sit overnight in the fridge.
- Cut and serve!
