Easter Carrot Patch Cupcakes
Spring is here and that means Easter is around the corner as well. These Easter Carrot Patch Cupcakes are a quick and easy dessert you can make and bring to Easter Dinner or you can just make them for fun if you don't celebrate Easter. Spring is an excuse to whip out all of your colorful decor and props and make fun desserts. These spring cupcakes are perfect to kick off a new season with.
This is one of my easier desserts to make and I had a ton of fun making it too. There isn't a lot that goes into making this recipe which is why I think you'll enjoy making it. I used a chocolate Betty Crocker cake mix, I really love the consistency of this cake mix and it's very affordable if you don't want to spend too much on an expensive brand.
Next, I also used fresh strawberries and orange melting chocolates to make the strawberries look like carrots. Melting chocolates can be difficult to work with so I suggest picking up a few bags just in case. Make sure your stovetop isn't too hot or the melting chocolate will get hard and you have to start all over. You also have to consistently mix it so the chocolate remains smooth.
Finally, frost your cooked cupcakes and dip them into crushed Oreos to give the cupcakes that dirt look. Pop the 'carrot' strawberries into the cupcakes (cut a small hole so the strawberry can sit in there) and you're all set! Simple and easy.
