Let's make some Oreo Brookies!
I like making Brookies but I wanted to add a fun twist on this recipe. In the cookie dough I wanted to add some crushed Oreos. I had some leftover from vacation and I knew they would be the perfect addition to this recipe. Of course you can leave out the Oreos in this recipe but why would you? Oreos make everything taste so much better.
For this recipe, you have to melt the butter and chocolate chip until it's smooth. This helps the brownie batter become smooth too. In your square baking pan you're going to spread the brownie batter around then add 6 scoops of your cookie dough. You're going to have a ton of cookie dough left over so you can save that for individual cookies later on. Make sure you store the dough in a ziploc bag in the fridge or freezer to keep it fresh.

Oreo Brookies
Ingredients
Cookie Dough:
- 1 ⅓ cup All-purpose flour
- ½ cup Unsalted butter (melted and cooled)
- ¾ cup Light brown sugar (loosley packed)
- ½ cup Granulated sugar
- 1 Large egg
- ½ teaspoon Vanilla extract or vanilla paste
- ½ teaspoon Baking soda
- Pinch of salt
- 1 cup semi-sweet chocolate chips
Brownie Batter:
- 4 tablespoon Unsalted butter
- ⅓ cup Semi-sweet chocolate chips
- ¼ cup + ⅛ cup granulated sugar
- 1 large egg, room temperature
- 1 teaspoon Vanilla extract
- ¼ cup All-purpose flour
- ¼ cup Unsweetened cocoa powder
- Pinch of salt
Instructions
- Preheat oven to 350 and line a square baking pan with parchment paper.
- Start with the cookie dough. On the stovetop melt the butter and set aside to cool. Add the flour, baking soda and salt to a bowl and whisk.
- In another bowl, add the sugars and one egg. Mix this together until smooth. Add the vanilla extract. Slowly add the flour mixture 1 cup at a time until fully combined. Last, slowly fold in your chocolate chips and oreos. Set aside and start the brownie batter.
- In a bowl, whisk the sugar, egg, and vanilla together until light and fluffy.
- On the stove, melt the butter and chocolate chips together until smooth. Fold in the cocoa powder, flour, and pinch of salt. Mix until everything is fully combined. Add the stove mixture to your egg and sugar mixture you have in a bowl. Mix together and add the brownie mixture to your square parchment paper lined baking pan. Use a spoon to spread it around. Add scoops of cookie dough on top of the brownie mixture.
- Bake for 25-27 minutes.
- Let cool in the pan for 5 minutes and cut into 9 pieces.
