Getting your spring desserts ready
Can you believe Easter is right around the corner? The colors, the family traditions, and Easter dinner. There are so many opportunities to cook with vibrant flavors and this easy dessert is one of my favorite things to make now. My husband loved the crunch and peanut butter taste. I have a feeling these cookies will be a yearly tradition in my home. They're easy-to-make. Exactly the type of dessert we love around here.
Ingredient's for these Easter Bird's Nest Cookies
There are only four main ingredients you need for this recipe and you can find them all at your local supermarket. You also need a muffin pan for this recipe but if you don't have one around, you can use muffin liners as a quick hack. Here's what you need for this recipe.
- semi-sweet chocolate chips
- creamy peanut butter
- chow mein noodles
- mini chocolate eggs
The key is to make sure the chocolate is properly melted before you add the cup of peanut butter. The peanut butter will mix into the melted chocolate perfectly with no hassle. I made sure to take it off the stovetop once the chocolate is melted so I don't ruin the chocolate. The coconut oil also helps the chocolate not stick to the saucepan so make sure to add that in!

Easter Bird's Nest Cookies
Ingredients
- Baking spray (to grease the muffin pan)
- 1 bag of semi-sweet chocolate chips
- 1 cup Creamy peanut butter
- 1 5 oz can of chow mein noodles
- Mini chocolate candy coated eggs (They typically sell these around Easter)
- 1 tbs Coocnut oil (used to help melt the chocolate
Instructions
- Coat your muffin pan with your baking spray.
- On your stovetop, melt the chocolate chips. Use a little bit of coconut oil to help with the melting process.
- Add the peanut butter to the melted chocolate and mix until everything is smooth.
- Next, add the chow mein noodles. Using a wooden spoon mix this together gently so the noodles don't break.
- Using a cookie scoop (I have a larger scoop) add the chocolate mixture to the muffin pan.
- Pop the pan in the fridge to chill for an hour.
- Carefully remove the bird nest cookies from the chilled pan and add three chocolate eggs to each nest. Enjoy!
