Easter Bird's Nest Cookies

Ingredients
  

  • Baking spray (to grease the muffin pan)
  • 1 bag of semi-sweet chocolate chips
  • 1 cup Creamy peanut butter
  • 1 5 oz can of chow mein noodles
  • Mini chocolate candy coated eggs (They typically sell these around Easter)
  • 1 tbs Coocnut oil (used to help melt the chocolate

Instructions
 

  • Coat your muffin pan with your baking spray.
  • On your stovetop, melt the chocolate chips. Use a little bit of coconut oil to help with the melting process.
  • Add the peanut butter to the melted chocolate and mix until everything is smooth.
  • Next, add the chow mein noodles. Using a wooden spoon mix this together gently so the noodles don't break.
  • Using a cookie scoop (I have a larger scoop) add the chocolate mixture to the muffin pan.
  • Pop the pan in the fridge to chill for an hour.
  • Carefully remove the bird nest cookies from the chilled pan and add three chocolate eggs to each nest. Enjoy!
