Baking spray (to grease the muffin pan)
1 bag of semi-sweet chocolate chips

Creamy peanut butter

5 oz can of chow mein noodles
Mini chocolate candy coated eggs (They typically sell these around Easter)

Coocnut oil (used to help melt the chocolate
Instructions
Coat your muffin pan with your baking spray.
On your stovetop, melt the chocolate chips. Use a little bit of coconut oil to help with the melting process.
Add the peanut butter to the melted chocolate and mix until everything is smooth.
Next, add the chow mein noodles. Using a wooden spoon mix this together gently so the noodles don't break.
Using a cookie scoop (I have a larger scoop) add the chocolate mixture to the muffin pan.
Pop the pan in the fridge to chill for an hour.
Carefully remove the bird nest cookies from the chilled pan and add three chocolate eggs to each nest. Enjoy!
