No campfire needed for these smore's cookies! I have an easy to make s'mores cookie recipe that takes 10 minutes to cook without any fuss. I love a tasty cookie and I love playing with new ingredients like gooey marshmallows, graham cracker crumbs, cocoa powder. So much delciousness! Now, I know that baking can sometimes be annoying. I used to feel that way before I practiced but now that I have the hang of how to bake, I can eye certain ingredients and not worry if I'm messing up the recipe or not.
Now these S'mores cookies weren't on my list of things to make but then ended up turning out really well after two different sets. The first bake didn't turn out as gooey as I wanted and the graham crackers didn't stay put. The second time they came out perfect. I didn't even want to eat them because they looked so perfect. For this recipe I used a mixer but you can also just use the regular method of mixing everything with your hand.
Some questions you might have with this recipe
Q: Can you use plant-based butter?
A: Yes you can but swapping the butter might change the consistency if use 1:1. I would try ½ stick at first to see if the cookie dough changes.
Q: How do you get the cookies so round?
A: As soon as the cookies come out I used my large cookie cutter to make the shape perfect.
Another thing with this recipe is that the cook time depends on the temp of your oven. Some ovens heat faster or are really cool so I would suggest you purchase an oven thermometer. S'mores Cookies
Ingredients
- 1 stick of butter softened
- ⅓ cup brown sugar
- ⅓ cup granulated sugar
- 1 egg
- ½ teaspoon vanilla extract
- ½ cup cocoa powder
- 1 cup all purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon corn starch
Instructions
- In a bowl combine flour, baking soda + baking powder, cocoa powder, salt, and corn starch and mix together.
- In another bowl combine sugars and softened butter until fluffy. Add in the egg and vanilla extract.
- Add the flour mix to this sugar mixture slowly.
- Using a cookie scoop get some of the cookiesdough and flatten it in your palm. Place a marshmallow in the middle and fold it over. Make sure a little marshmallow is sticking out. Coat with graham crackers.
- Cook at 350 for 12 minutes. Depending on your stove temperature cook for another 5 minutes if it's not ready.
- Cool for a few minutes and enjoy.
