    Rice Krispie Treat Cookies

    Let's make rice krispies but let's cookies! These Rice Krispie Treat Cookies are a quick and sweet cookie recipe to make and it's the perfect dessert for summer. The cookie dough is buttery soft and chewy while the rice krispies give each cookie that crunch in every bite. What makes this chewy cookie a fan favorite? Who doesn't love rice krispies? It's a classic treat and all you need is a few ingredients like the ones I listed in the recipe card. Here are the items you need to pick up from the grocery store.

    • 1 stick Butter room temperature (melt butter for 20 seconds if it's not room temp)
    • ½ cup Granulated Sugar
    • ½ cup Brown Sugar 
    • 1 Egg room temperature
    • 1 teaspoon Vanilla Extract
    • 1 ¾ cups Flour
    • ½ teaspoon Baking Powder
    • 1 ½ cup Rice Krispies (I rolled the dough in rice krispies)
    • 1 large marshmallow for each scoop of dough in your medium cookie scoop

    Let's make some Rice Krispie Treat cookies!

    While you set your oven to 350 degrees. prepare your cookie sheet with parchment paper. Add in the sugars and butter to a large mixing bowl or electric mixer and mix together with your spoon or mixer until fluffy. Slowly add in the room temp egg and vanilla extract and blend all of the ingredients together. Next, add in the flour and baking powder. What's the best flour for cookies? I like King Arthur Baking all-purpose flour. If that's out of your price range you can use store bought flour. Once you scoop the cookie dough out you can flatten it and add the large marshmallow inside and fold the dough over. Roll it around to make sure the marshmallow is fully covered. Finally, roll the dough in rice krispies. The recipe I followed also added rice krispies to the dough but I liked it this way better. Put the cookie dough on the prepared baking sheet and cook for 13-15 minutes until golden brown. These will be large cookies! The final results should look like the cookie image in this post. Gooey and delicious. 

    These are the perfect cookies for a party or just to enjoy alone. Classic rice krispie treats in one cookie. Store the leftover cookies in an airtight container and enjoy! Let me know if you try the recipe!

    Ingredients
      

    • 1 Stick of butter room temp
    • ½ cup Granulated sugar (you can swap with stevia if you want a healthier option)
    • ½ cup Light Brown sugar
    • 1 Egg
    • ½ teaspoon Vanilla extract or vanilla paste
    • 1 ¾ cup All-purpose flour (King Arthur Baking is my favorite to use for this recipe)
    • ½ teaspoon Baking Powder
    • 1 cup Rice Krispies (store brand works too)
    • Large Marshmallows

    Instructions
     

    • Prepare your baking sheet with parchment paper and set aside. If you don't have parchment paper use a baking spray or a non-stick cookie sheet.
    • Preheat oven to 350
    • Add your sugars to a large bowl or your stand mixer with the room temp butter. Mix together until fluffy. I like to use my hand mixer for this. Mix for 1 minute.
    • Next, add in the egg and vanilla extract until fully blended.
    • Follow that step up with the flour and baking powder. I like to add the flour and baking powder in a separate bowl and slowly add this to the butter and sugar mixture.
    • Mix everything together and scoop some dough out with your cookie scoop. I have a larger cookie scoop so my cookies will look different. If you have a smaller cookie scoop your cookies will be smaller. Flatten the cookie dough and place a large marshmallow inside. If you only have small marshmallows you can use that too. Fully cover it and roll up the dough. Drop the dough in a bowl of rice krispies.
    • Place the cookies on a parchment paper and cook for 15 minutes.
    • Cool on your cookie sheet for 5 minutes and enjoy!

    Notes

    Q: Can you replace the butter or plant-based butter?
    A: Yes, I would say use a little less of the plant-based butter due to the consistency. I've noticed when I use the same amount of plant-based butter the dough gets really watery. Earth balance vegan butter is a great substitute and I've been told it's best for baking. 
     
    Q: Can you substitute butter for coconut oil?
    A: Yes! Coconut oil can usually replace butter in baking at a 1:1 ratio
     
    Q: Do you need to use all-purpose flour for cookies?
    A: All-purpose flour has a balanced protein content that helps create the soft chewy or crispy cookie you're looking for. You can also use King Arthur Baking gluten-free flour too.
