Iced Oatmeal Bars with a sweet frosting on top

Iced Oatmeal Bars

Ingredients
  

  • ½ cup unsalted butter, melted and cooled
  • 1 cup old fashioned oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • 1 tablespoon dark corn syrup

Vanilla Icing:

  • ½ cup powdered sugar
  • 1 tablespoon whole milk

Instructions
 

  • Preheat your oven to 350 and line a square baking pan with parchment paper
  • Add your oats to a ziplock bag and crush them slightly but not too much so it doesn't turn into a flour. You can also use a food processor.
  • Melt your butter and set it aside to cool.
  • In another bowl add your flour, baking soda, cinnamon, and salt. Whisk and set aisde.
  • In a bowl with the melted butter add both the granulated sugar and brown sugar until it looks like wet sand. Add the egg and dark corn syrup.
  • Next, add the flour mixture to the butter mixture and use a spoon to mix it together. Do not over mix the bar mixture.
  • Add the bar mixture to the square baking pan and make sure it's fully spread out like I'm doing in the video. Bake at 350 for 24 minutes. Once the bars are cook let them cool for an hour.
  • After the bars are cool make your icing. Top each bar with icing and enjoy!
