Classic Linzer Cookie Recipe

Ingredients
  

  • 2 cup All-purpose flour
  • cup Super fine almond flour
  • 1 cup Or 2 sticks unsalted butter, softened at room temp
  • cup Granulated sugar
  • 1 Egg
  • 1 Egg yolk
  • ½ teaspoon Almond extract - optional
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Cornstarch
  • ¼ teaspoon Sea salt

Instructions
 

  • Line your baking sheet with parchment paper and set aside.
  • In a small bowl add the flour, almond flour, corn starch and salt. Whisk and set aside.
  • In another bowl add the butter and sugar and use your hand mixer to blend. Slowly add the egg yolk and vanilla extract. Optional you can add the almond extract.
  • Slowly add the flour mixture to the butter and sugar mixture 1 cup at a time. Make sure you use a spoon to scrape down the bowl to make sure all of the dough is blended.
  • Add the cookie dough to plastic wrap and chill in the fridge for an hour.
  • When the hour is up, roll out the dough on a floured surface or on parchment paper. I try not to roll it out super thin so the cookies aren't too crunchy.
  • Preheat oven to 350.
  • You need a linzer cookie press I got mine from Amazon to shape the cookies. The top should have the hole in it, and the other cookie should be regular. Like the photos.
  • Bake at 350 for 10-11 minutes. Cool the cookies on the baking sheet.
  • Brush the top cookie (the one with the hole) with powdered sugar.
  • Get your favorite jam and put 1 tablespoon of jam on the cookie without the hole. Place the powdered sugar brushed cookie on top of the jam.
