Caramel Apple Pie Cookies

A deliciously sweet caramel apple pie cookie that's perfect for the crisp fall weather

Ingredients
  

Cookie dough:

  • 1 ⅓ cup Flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of salt
  • 1 egg
  • 1 stick unsalted butter softened
  • 2 teaspoon vanilla extract
  • ½ cup brown sugar
  • cup granulated sugar
  • Caramel sauce - I bought some in the ice cream section

Apple ingredients:

  • 1 peeled chopped apple
  • 1 tablespoon unsalted butter
  • ¼ cup brown sugar
  • 1 tablespoon cinnamon
  • ¼ teaspoon nutmeg

Instructions
 

  • Preheat your oven to 350 degrees
  • Add the flour, baking powder, baking soda & salt into a bowl.
  • In a pot, add your 1 stick of butter and cook on medium heat, stirring consistently until the butter has browned. This takes about 10 minutes, so keep an eye on it.
  • Once the brown butter is cooled, add to a bowl with the  sugars. Whisk this together slowly add your egg, vanilla extract and mix again.
  • Add the dry ingredients to your wet ingredients. This should make about 6 or 7 cookies. Use a large cookie scoop and place the dough on a cookie sheet. Form a well in the dough. Pop the dough in the fridge for 15 minutes.
  • On the stove, add your diced apple, brown sugar, cinnamon, nutmeg, and 1 tablespoon of butter. Cook for about 3-5 minutes, then set aside.
  • Add the apple filling we made to the cookies & bake at 350 degrees for 15-18 minutes. Check on the cookies at the 16-minute mark.
  • Once the cookies are cooled, drizzle with caramel or eat the cookies alone.
