Preheat your oven to 350 degrees
Add the flour, baking powder, baking soda & salt into a bowl.
In a pot, add your 1 stick of butter and cook on medium heat, stirring consistently until the butter has browned. This takes about 10 minutes, so keep an eye on it.
Once the brown butter is cooled, add to a bowl with the sugars. Whisk this together slowly add your egg, vanilla extract and mix again.
Add the dry ingredients to your wet ingredients. This should make about 6 or 7 cookies. Use a large cookie scoop and place the dough on a cookie sheet. Form a well in the dough. Pop the dough in the fridge for 15 minutes.
On the stove, add your diced apple, brown sugar, cinnamon, nutmeg, and 1 tablespoon of butter. Cook for about 3-5 minutes, then set aside.
Add the apple filling we made to the cookies & bake at 350 degrees for 15-18 minutes. Check on the cookies at the 16-minute mark.
Once the cookies are cooled, drizzle with caramel or eat the cookies alone.
