Almond croissant cookie

- 1 cup All-purpose flour
- 1 Stick of butter softened
- ½ teaspoon salt
- ¼ teaspoon Baking Powder
- ¼ teaspoon Corn Starch
- ¼ cup Granulated sugar
- ½ cup Light brown sugar
- 1 Egg (room temp)
- 1 teaspoon Vanilla paste or vanilla extract (I liked the recipe with vanilla paste)
- ½ teaspoon Almond Extract
- ½ cup Sliced Almonds
- Powered Sugar (sprinkle on the cookies after they're cooled)
Preheat oven to 350F degrees
In your mixing bowl, mix together the softened butter, sugar, and brown sugar until it fluffs up.
Next, add in your egg, vanilla extract and almond extract until combined.
As this is mixing, in a medium bowl whisk together the flour, baking powder, salt and corn starch. These dry ingredients will be added to the wet mixture ½ cup at a time. Mix everything together and use your spatula to make sure you're scraping the bowl as your mix so everything is blended together.
Use your cookie scoop to form your cookie dough balls. Roll those balls into the sliced almonds.
Cook at 350 for 13 minutes. Let the cookies cool on a wire rack.
Sprinkle with powdered sugar once the cookies are cool and enjoy!
- You can swap the almonds out with a nut-free option
- You can also use a healthier sugar alternative like cane sugar or Stevia
