Cut your onions into medium-sized rings and set aside.
Set out three large bowls, one for the flour mixture, one for the egg mixture, and one for the breadcrumbs
Use a whisk to blend the eggs and buttermilk then begin your onion ring dipping process. Dip the onion ring into the egg mixture, flour mixture, egg mixture once again, then the breadcrumbs.
Coat your air fryer with olive oil and air fry at 400 degrees for 6 minutes (keep an eye on them so they don't burn)
Serve with your favorite condiments and enjoy!
Notes
If you don't have an air fryer, feel free to fry them on your stovetop. I like to use coconut oil or olive oil for healthier options. Or you can simply use vegetable oil.
If you run out of the egg mixture, just add in an extra egg to your bowl along with a dash of buttermilk to continue dipping your onions.
